Homemade Beef Jerky

I am so excited, we now have a dehydrator.   Our great little yard sale find for $2.00 brand new in the box.  (See here about yard sales).

My first tester item was Beef Jerky, I chose this because I have a house full of people that love beef jerky so I knew I had to try my hand at it.  It was so yummy.
I did not venture and try this without a recipe or to even come up with my own sauce, my handy dehydrator came with a booklet that included some recipes and beef jerky was in there so I followed it…..for the most part.  I say that because sometimes you just run out of stuff and you have to use what you have.  

The recipe in the book called for the following:

Round or Flank Steak (very lean)
4 T Soy Sauce (I only had maybe 2 so that is what I used)
4 T Worcestershire (I used extra to compensate for less Soy sauce)
1 T Ketchup
1/4 t Pepper
1/4 t Garlic Powder
1/4 t Onion Salt
1/2 t Salt

Marinate 1 to 2 hours.  It says to dehydrate on 145 for 8 to 10, but honestly 8 was even too long.  The tasters opinion is that about the 6 1/2 mark it was good (this was from a few of the men in my house and one of their friends and I would say they were all in agreement about that so truly you just have to start tasting it around that 6 hour mark or as you see it getting a pretty good dry look to it.

This is a must do if you love Beef Jerky, no gross stuff, just fresh beef and whole organic ingredients.

Today I am going to try using a turkey jerky.
